Sauerkraut Salad

Amount Measure Ingredient -- Preparation Method

Dressing:

1 1/2 cups sugar

3/4 cup distilled white vinegar

1/4 cup vegetable oil

Salad:

1 quart sauerkraut -- (jarred) undrained

1 1/2 cups celery -- diced

1 medium sweet onion -- thinly sliced

1/2 medium green bell pepper -- diced

2 ounces pimiento -- diced

1 teaspoon celery seed

freshly ground pepper

 

 

For the Dressing: Combine sugar, vinegar and oil in small saucepan. Bring to

boil over medium heat. Reduce heat to low and simmer dressing, stirring

occasionally, 5 minutes.

Salad: Combine remaining ingredients in large bowl and mix well. Pour dressing

over and toss to coat. Cover and refrigerate overnight. Drain before serving.
