If you can find some recipes that call for regular chorizo, just substitute the veggie kind for it. The box I have (Cedar Lake) suggests using it to make " Chorizo & Eggs " (if you're not vegan -- or you could use tofu instead of eggs) and you could use the Chorizo & Eggs to make breakfast burritos. Other ideas -- tacos, burritos, enchiladas, tostadas. . . .maybe even as a pizza topping. . . a Mexican-style casserole -- use the mix instead of ground b**f or the veggie recipe crumbles, chili, stews. . . .. .
