Rice, Carrot, Mushroom And Pecan Burgers

1 tablespoon olive oil

1 large onion -- chopped

3 cloves garlic -- minced

(approximately 1 tbsp.)

1/2 pound mushrooms -- trimmed and sliced

1/2 cup toasted pecan halves

1 cup cooked brown rice

(or brown basmati)

1 cup grated carrots

1 cup fresh bread crumbs -- (about 3 slices)

Salt and freshly ground pepper -- to taste

1 large egg -- lightly beaten

Sliced tomatoes and lettuce -- if desired

 

Serves 6.

 

Preheat the broiler. Heat oil in a nonstick skillet over medium-high heat

until hot. Add onions and garlic and saute until onions are soft, about

three minutes. Add mushrooms and saute three minutes more, or until they

are slightly soft. Remove from heat. Coarsely chop pecans in a food

processor, add the rice, carrots and onion mixture and pulse until the

mixture has a mealy consistency. Transfer mixture to a large bowl, add

bread crumbs and mix well. Season with salt and pepper and stir in the

egg. Shape into six patties. Place patties on a baking sheet that has

been lightly oiled or coated with cooking spray. Broil about 6 inches from

the heat until lightly browned, about five to seven minutes on each

side. Top with tomatoes and lettuce if desired and serve on toasted buns.
