Many people are making the transition to vegetarian diets, and/or are trying to learn what is appropriate for vegetarian family members, guests, etc. By giving the impression that beef/chicken broth, etc., are acceptable ingredients, we misinform those who are trying to learn. Having been vegetarian since 1968, a cook at two vegetarian restaurants, and having taken and taught classes on vegetarian cooking, making substitutions is second nature for me too. When entering or importing recipes into MC, however, I make the correction, because that recipe may well be shared with someone who is not so enlightened as some of you purport to be. Our moderator has politely stated a *preference* for clarity in recipes -- not unreasonable on a vegetarian list. That said, I too, appreciate the efforts of those who have made so many wonderful contributions and regret that time does not permit me to participate to the extent I once did.
