Pasta with Szechuan Peanut Dressing

8 ounces linguine

2 cups broccoli florets

2 cups cherry tomatoes

Szechuan peanut dressing ( seperate

recipe)

 

Bring a large pot of water to a boil and add the linguine. When the

water returns to a bil, stir occassionally to seperate the linguine.

Reduce the heat to medium-high and cook for 10-12 minutes, or until

al dente.

 

While the pasta is cooking, put the broccoli florets into a meium

microwave proof dish; add about 1/4 cup of water. Cover and

microwave on high for about 4 minutes until crisp tender. Drain

well.

 

When the linguine is done, drain well; return to the pot. Add

Szechuan Peanut dressing and toss. Add the broccoli and tomatoes,

toss again. Adjust the seasoning to taste.
