Szechuan Peanut Dressing

Amount Measure Ingredient -- Preparation Method

1/2 cup peanut butter, chunky or smooth

1/2 cup hot vegetable stock

1 teaspoon low sodium soy sauce

2 tablespoons white rice vinegar

2 tablespoons canola or safflower oil

1 teaspoon minced garlic

1/2 teaspoon red pepper flakes -- ( or to taste )

 

Whisk together the peanut butter and the stock. Stir in the

remaining dressing ingredients. The sauce should have a cake batter

consistency; add more stock or water as needed.
