Guest guest Posted November 4, 2000 Report Share Posted November 4, 2000 * Exported from MasterCook * Fluffy Mashed Sweet Potatoes Recipe By : Vegetarian Times Complete Thanksgiving Cookbook, page 127 Serving Size : 6 Preparation Time :0:00 Categories : Fruits Side Dishes Vegetables Vegetarian Times Thanksgiving Menu 8 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cooked and mashed sweet potatoes (2 small or 1 large sweet potato) 3 bananas -- mashed 1 1/2 cups soy milk or milk 1/2 cup prune juice 3 tablespoons honey 1 teaspoon allspice 2 teaspoons chopped candied ginger MAKES 6 SERVINGS. This dish is part of the meal but is sweet enough for dessert Preheat oven to 375F. Combine all ingredients except ginger and beat until fluffy. Pour into an oiled casserole and bake 50 to 60 minutes, until golden brown. Sprinkle with candied ginger.
