Guest guest Posted November 4, 2000 Report Share Posted November 4, 2000 * Exported from MasterCook * Carol's Seitan Roast With Mushroom Gravy Recipe By : Vegetarian Times Complete Thanksgiving Cookbook, page 79 Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Vegetables Vegetarian Times Thanksgiving Menu 8 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound seitan 2 cups mushrooms 2 cups sliced onions 1 1/3 ounces Fantastic Foods Tofu Scrambler (half a 2.7-ounce box) 4 cups water 1 tablespoon chopped fresh basil leaves (or 1 teaspoon dry basil) 1 tablespoon chopped fresh sage leaves (or 1 teaspoon ground sage) MAKES 6 SERVINGS This delicious seitan recipe has been successful at celebratory dinners with vegetarians and nonvegetarians alike. Slice seitan into 1/2-inch slices and place in a Dutch oven. Layer mushrooms and onions on top. In a bowl, combine dry Tofu Scrambler with water, basil and sage. Pour over seitan and vegetables. Bring to a boil over medium-high heat, then reduce heat to medium, cover pot and simmer 30 minutes, or until gravy has thickened and vegetables are soft. Serve hot.
