Hi all,

 

This was first posted by " Katie <crill Dec., 1999 to TNT

list. I made it tonight. YEOW! It's so good!! Use as a main dish or

perhaps an appetizer. It's vegetarian...but tastes very beefy (to me). It

is just toooo good. I will be making this again and again...especially

for special occasions. Thanks Katie!! I loved it!!

Mushroom Crusted Quiche - TNT

 

Recipe By :Katie (adapted from a women's magazine,1975)

Serving Size : 5 Preparation Time :0:00

Categories : Vegetarian

 

 

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3/4 pound mushrooms -- finely chopped

2 tablespoons butter

1/2 cup crushed saltine crackers -- to 2/3 cup

3/4 cup sauteed onion -- or green onion

Monterey jack cheese -- shredded

3 eggs

1 pint cottage cheese

1/4 teaspoon cayenne pepper

 

Saute mushrooms in butter. Add enough crushed saltines to absorb

juice. Press into pie pan.

 

Sprinkle crust with onion. Heap jack cheese over onion; don't pack down.

 

Whirl eggs, cottage cheese and cayenne in blender. Pour into crust. Bake at

350°F 45 minutes, until a knife comes out clean.

NOTES : A good vegetarian main dish....also goes well with ham.

 

Brenda's 11/00 kitchen test: Awesome tasting. I added about 1/2 t. salt,

used part leeks/part green onions... about 1 to 1-1/2 cups jack cheese. I

sauteed the onions in part olive oil/part butter. I used one container of

cottage cheese (1 lb.). This is so good it should be

outlawed. Rich. Serves about 4 to 6. Could be served in squares...or pie

shapes. For an evening 'breakfast' or as an appetizer. I bake mine in a

large ceramic tart dish. This is something I would take to our family's

Christmas party. (Reminds me of a mushroom/cream cheese crusted turnover I

buy frozen at the market - which is higher in fat but the taste is quite

similar.)
