Like Karen, it is so automatic to substitute vegetable broth or use the dehydrated vegetarian " chicken " broth that I buy at Whole Foods, that I don't even notice that the recipe might literally say something else. So, it goes. It's a minor point and not worth worrying about. Let's collect recipes, eat, and cook instead! Here is a recipe from the Vegetarian Times Thanksgiving Cookbook that is not part of a menu. Kathleen * Exported from MasterCook * Candied Apple Muffins Recipe By : Vegetarian Times Complete Thanksgiving Cookbook, page 185 Serving Size : 12 Preparation Time :0:00 Categories : Breads, Quick Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups unbleached all-purpose flour 1/2 cup soy flour 1 tablespoon baking powder 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 1/3 cup sugar 2 eggs OR equivalent egg substitute OR Egg Replacer 1 cup unsweetened or regular applesauce 4 tablespoons canola oil 1/4 cup cinnamon candies MAKES 12 MUFFINS The candied flavor comes from little cinnamon candies called Red Hots. Preheat oven to 375F. Lightly oil a muffin tin. In a large bowl, combine flours, baking powder, salt, cinnamon and sugar; set aside. In a medium bowl, lightly beat eggs or Egg Replacer; stir in applesauce and oil. Stir liquids into flour mixture only until dry ingredients are moistened. Add cinnamon candies; fold in quickly to prevent color from bleeding into batter. Spoon batter into a muffin tin until cups are 1/2 to 3/4 full. Bake 25 minutes, or until a toothpick inserted in center comes out clean. VARIATION: Omit candies and stir into batter 1/4 cup chopped walnuts, pecans, dried cherries or cranberries, golden or dark raisins, dried apples or apricots. I too automatically substitute chicken (or otherwise) broth/stock for veggie broth/stock. I do not understand why this is turning into a blown up drama. I have heard some members saying that they will stop posting recipes because of this. Was it not the purpose of this list to share recipes, share knowledge with others, to assist others when asked (and if we could do it), and to enjoy cooking the most fabulous vegetarian meals ever? I really do hope that those members who are having second thoughts about posting do not quit. I have received so many fabulous dishes from this dish, learned a lot about different foods/ingredients, and I enjoy all the sharing that is present.
