Wild Rice with Dried Fruit

Amount Measure Ingredient -- Preparation Method

2 cups wild rice -- long grain

1/2 cup pitted prunes

1/2 cup dried cherries or cranberries

1 cup chopped pecans

1/2 cup water

1 pinch salt -- or to taste

 

Cook rice according to package directions or until ends break open like flowers,

about 1 hours; drain.

 

Cut each prune in 8 pieces; add to rice with cherries or cranberries and pecans.

Add water and salt. Cover pan; cook mixture over low heat or in 300F oven 15

minutes. Stir before serving.

8 large apples -- cored (peel, optional)

1 cup maple syrup

1 cup chopped walnut meats

 

Preheat oven to 350F. Place apples in a baking dish. Pour syrup over apples;

sprinkle with walnuts. Bake 35 minutes.

Creamy Vanilla Frozen Dessert

Amount Measure Ingredient -- Preparation Method

1 cup water

3/4 teaspoon agar powder (1 1/2 tbs agar flakes)

1/3 cup honey

(or 1/2 cup turbinado sugar granulated

cane sugar)

10 1/2 ounces firm or extra-firm silken tofu -- regular or low-fat

3/4 cup lowfat soymilk or rice milk

1/2 tablespoon vanilla extract

1/4 teaspoon salt

 

In a small saucepan, mix together water and agar. Stir over medium-high heat

until it starts to simmer, then simmer 3 minutes. Pour into a blender with

remaining ingredients; blend until very smooth. Freeze according to ice-cream

maker directions. Let soften at room temperature before serving.

VARIATION: Alternatively, freeze in ice-cube trays or in a flat plan. Cut frozen

mixture into chunks and process in a food processor just before serving.
