Barley Pilaf with Pine Nuts

1/2 cup chopped onion

3 cloves

1/2 bay leaf

1 tablespoon olive oil

1/2 cup pearl barley

1/8 teaspoon cinnamon

2 tablespoons pine nuts, toasted lightly

1 1/2 tablespoons minced fresh parsley leaves

 

In a small heavy saucepan cook the onion, the cloves, and the bay leaf in the

oil over moderate heat, stirring, until the onion is browned. Stir in the

barley, the cinnamon, 1 cup water, and salt and pepper to taste, bring the water

to a boil, and simmer the mixture, covered, for 30 to 35 minutes, or until the

liquid is absorbed and the barley is tender. Discard the cloves and the bay

leaf and with a fork, stir in the pine nuts and the parsley. Serves 2.
