Tonight I made one of my favorite use-up-leftovers and sneak-veggies-into-the-baby breakfasts... What I call Sweet Potato breakfast. For infants, gut some cooked sweet potatoes and mix with no-sugar added applesauce in the food processor. As the baby gets older you can make it less fine and eventually mash by hand. For extra liquid to facilitate pureeing, I use unsweetened calcium-fortified apple juice for flavor or soy milk for a pudding like texture and calcium and protein. My baby was always very good with chewing, so I started adding raisins into the food processor as she got older. Then, now that she's got quite a few choppers and I've seen her chew whole raisins, I mix in whole raisins and some cinnamon for added spice. Tonight I used calcium fortified orange juice to give the mixture some added pizzazz and, honestly, to try and get rid of the OJ. I tasted it, it was pretty yummy. I made a batch to warm for her tomorrow a.m. and put an additional serving in the freezer. Angel A. -- Angel R.
