Guest guest
This might satiate the pudding cravers by omiting the pie crust. I know this a widely known vegan recipe, but here it is again. Made this yesterday for my Grandma who is a major chocoholic, and it was huge hit. Hubster loved it too. Yeah, I ate a piece. I admit it. Satisfied? 1 16oz. pckge SILKEN tofu (next time I'm trying Firm tofu) 1 bag vegan chocolate chips 1 store-bought vegan graham cracker pie crust (or a nut meal pie crust would be divine for this recipe. it says, " hazlenut " to me, or macadamia.) I personally detected the beaniness of the tofu, but the omnis (I'm surrounded!) in my life were clueless. I sprinkled the bottom of the pie crust with a few chopped walnuts and peanut butter chips (sinful), but the original recipe didn't call for it. *In a food processor (or blender), pulvarize the tofu, scrape down sides as needed *Measure out 1/4 cup chocolate chips and set aside *Over medium-low heat in a very dry saucepan or double boiler, melt the package of chocolate, stirring constantly. *Get ready with that rubber spatula! *Once melted, immediately scrape chocolate into tofu and blend. *Once incorporated, stir in the extra chips *Optionally stir in any other yummies (nuts? raisins? etc?) you can dream up. *Pour into pie crust, and top with nuts, more chips, etc. *Give chocolate pot and spatula to chocoholic grandma for LICKING *Chill in fridge for an unbearably long 3 whole hours *Go to the gym to avoid crazed chocoholic grandma *Come home from gym and enjoy whatever might be left!
