I've never had a problem making instant pudding (the cheap store-brand kind) with soymilk (even though I've read that it doesn't gel, it always did for me). I used to use Westbrae organic unsweetened but now use Silk organic unsweetened (cheaper) - both always worked. Hm. Maybe it's an unsweetened vs. sweetened thing? But now I use a pudding mix that you make in the blender with silken tofu, and it is completely yum. It's from the Mori-Nu " mates " line, and comes in chocolate and some other flavors (but I've only tried the chocolate).
