RE: more packable lunch suggestions

My kids grew up on almond butter instead of peanut butter, and that should

be fine with the school. I send it with them to a child care center that

does not allow peanuts. People with those really horrible fatal pb allergies

should not be sensitive to the almonds, or at least not to the same extent.

I don't know if your son will like it, but it is really really good so I

would at least try it. And almonds are much more nutritious than peanuts

anyway.

 

We also make sandwiches with slices of tofu-lin (or any baked marinated

tofu) and avocado, plus vegan mayo spread on the bread, and mustard if your

child likes that. My kids enjoy these sandwiches sometime. Also, if he likes

chicken/egg salad kind of things, I have a great tempeh salad recipe that is

just like chicken salad. My kids won't eat it, but my husband and I love it.

It uses both soy yogurt and vegan mayo, so it's not as fatty as straight up

mayo.

At my daughters school the only butter they will allow is sunflower seed

butter ( i think thats what its called)
