Does someone have an idea how to turn my favorite French Toast recipe (from PETA's Compassionate Cook) into a baked version? I'd appreciate any thoughts. I'm trying to ease the kitchen congestion of our Mother's Day Brunch tomorrow by using the oven rather than the griddle. Happy Mother's Day to everyone! Enjoy. heather French Toast Casserole 1 loaf cinnamon swirl bread (I like Pepperidge Farms) 6 eggs, beaten 3 cups milk 2 tsp. vanilla extract Powdered sugar Place bread cubes in a greased, 3-quart shallow baking dish. Mix eggs, milk and vanilla, then pour over bread. Cover and refrigerate one hour or overnight. (This step is important, because it ensures the bread absorbs the egg/milk mixture.) Bake at 350º for 50 minutes, or until golden brown. Sprinkle with powdered sugar, and serve with pancake syrup, if desired.
