I have a cookbook called The Teen's Vegetarian Cookbook by Judy Krizmanic. Great easy meals. Also - hummus, black bean dip or tofu slices (bake or saute tofu in a sauce and use for sandwiches - can do bbq, tamarii, curried etc. Have a variety of nut butters on hand for variety. I like BBQ burgers. 1/2 bottle bbq sauce, 1/2 cup water, 2 TBPs oil. 8 oz tempeh. Send bread and this in reusable container. Also many pasta dish are great cold. Wheat noodles with a peanut sauce - well heck so many optioms with pasta. Saute veggies and tofu and you have a fantastic meal. Soup in a thermos is easy. Try to plan lunches according to what you cook at home and it will be easier on you. Fresh fruit, veggies, crackers, popcorn, soy/rice milk as extras.
