This year I am attempting to restart the tradition with a vegan broth fondue (and a vegan chocolate fondue for desert - yum!). I am trying to figure out what to cook in the fondue. So far I have mushrooms, pre-steamed brocolli and cauliflour, veggie dogs, and par-boiled new potatoes. I was thinking of also doing tofu cubes but I am not sure how to prepare them so that they don't turn out mushy and gross. Should I freeze and thaw them ahead of time? Also, strips of lettuce or (par-boiled) cooking greens would be good. Seitan would probably work better in chunks than tofu. You might also want to consider a vegan version of Asian " hot pot " . Start with water or veg broth, and add things over time, eating some after a minute or two and allowing some to stay in the pot for longer. By the end, add some noodles and enjoy the resultant soup. Guest guest Posted January 3, 2005 Report Share Posted January 3, 2005 You cook the veggies in broth (in this case veggie broth) then dip them in a variety of dips for eating (we used creamy mustard sauce, basil pesto, and thai peanut sauce - all homemade and yummilicious!) You can have celery, brussel sprouts(boiled), bread, potatoes cubes(boiled) and cheese for your fondue. Those are the things I tried myself.
