Yesterday we had our staff Xmas meal and when the people around me saw me with potatoes and frozen veggies they remembered I was veg. This prompted lots of questions about what we would eat at Xmas. Frankly, I don't do anything very special. I never have and it doesn't bother me. Some people were shocked as 'all the important traditions in a family centre around food'. Not in our family but I didn't bother to explain...We enjoy good food, my son often helps me prepare it, we grow it in our garden, we try to be aware of what is healthy but I don't really love to cook. I don't think this has anything to do with being a veg. However, it got me thinking that maybe this year I would try dsomething 'special' for Xmas. As Canadians, there will be a turkey for my parents. Side dishes will be homemade cranberry sauce, stuffing/dressing, mashed potatoes, sweet potatoes baked with garlic (my fave), and brussell sprouts. It has always been enough for my son and myself to just eat the sides. we have a big breakfast and are not overly hungry. However, in case I am feeling inspired (or guilty) do you have any ideas. I know in the UK nut roast is popular but we don't have that in Canada. We did Tofurkey for Thanksgiving and I really wasn't impressed. It was ok but nothing special, especially as it is quite expensive. I would like to try something simple as I find Christmas eve and day to be busy and would rather not spend most of the little time I have in the kitchen. Something that could be made ahead and frozen would be great. I was thinking about lentil loaf but it has never turned out well for me. Any suggestions, recipes, etc. would be appreciated.
