The first Thanksgiving I spent with my (now) in-laws, my husband's grandmother cooked up a huge feast, including a " vegetarian " broccoli cheese casserole. Since it was one of the few veggies on the menu, I had three helpings - and spent the next two days sick as a dog. Turns out she had made it with chicken stock, because, " it's not *meat*, it's a spice! " We laugh about it now - and *I* make the casserole. (And this year, they're buying me and my daughter a Tofurkey. Not a big fan of the product, but for a family of meat-centric Texans, it's a huge gesture on their part, so I'm eating it in the spirit intended. That is a big step for some families to end up buying a tofurky or something similar for the extended family.
