Guest guest
Hi everyone! I've been reading the vegan tuna salad recipes and I wanted to throw this one in the mix. It's a raw salad and my very particular eater, Joy, loves this stuff. I've begun adding diced apples and extra celery to it. I also don't use as much sweet relish as the recipe calls for. It's really tasty. In fact, I'm eating it right now! Soak overnight: 1 cup raw almonds 1 cups raw walnuts Dice: 1-2 stalks celery 1 med red onion 3-5 organic baby dills -Nama Shoyu (or tamari) -Olive oil (added at the end to add moisture, approx. 2 tbs) -Celtic Salt - if you can afford it. This is optional and is sprinkled over the top of mixture -approx. 1/2 bottle cascadian farms sweet relish -juice from one lemon Drain nuts and put in food processor. Blend to a fine meal. Add onion and blend. Pour mixture into bowl and add other ingredients. Stir well. Serve as a sandwich or salad on a bed of lettuce.
