Guest guest
I was told Liquid Smoke is a good substituion for this. I bought some but have never used it. You can find it at a regular grocery store; can't remember what aisle. Message: 3 Sun, 16 May 2004 20:30:45 -0600 " Katie Mangan " <kmangan recipe substitutions I need to pick some brains here. Does anyone have a great substitution idea for ham bone or bacon etc in a recipe? I realize you can leave it out and in most cases I do and it works out fine but I have this formerly wonderful bean recipe that is now highly blah without it. ANy idea? Guest guest
I have never tried liquid smoke plain in beans, but we make really good fake bacon out of thinly sliced tofu that is marinated in soy sauce, liquid smoke, maple syrup & nutritional yeast. My dh (who is not vegi) says that it is pretty close to the " real " thing, so the liquid smoke may work in beans, too. You definately get the smoky flavor from it, but not the sweetness that I guess some pork products have. I guess that is why the fake bacon recipe calls for some maple syrup, too.
