Recipe

Chewy Peanut Butter Cookies

 

A perfect snack to share with friends, family, or even strangers in the street!

 

 

Ingredients:

 

1 1/2 cups finely ground oats or oat flour

1 cup unbleached all-purpose flour

1/2 teaspoon aluminum-free baking powder

1/2 teaspoon baking soda

1 cup natural unsalted peanut butter

2 tablespoons water

1/2 cup maple syrup

1 teaspoon vanilla extract

1 cup granulated cane juice (Sucanat)

2/3 cup Spectrum Spread or other margarine

 

 

Directions:

 

Preheat oven to 350°. In small bowl, stir together ground oats, flour, baking

powder, baking soda, and salt; set aside.

 

Use electric mixer to beat peanut butter and water together in large bowl until

smooth. Add maple syrup and vanilla and beat until well blended. Add granulated

cane juice and Spectrum and beat until incorporated. Add dry ingredients and

beat on low speed just until completely blended.

 

Drop dough by tablespoonfuls (or use a 1 1/4-inch diameter scoop) onto baking

sheets lined with parchment. Press a crisscross pattern onto the tops of cookies

with the tines of a dinner fork.

 

Bake until tops are lightly browned but cookies are still slightly soft, 10 to

12 minutes. Cool on racks. Cookies can be stored in an airtight container for

several days.Makes about 36 cookies

Obesity Becoming Major Global Problem

 

 

It's a bitter truth to swallow: About every fourth person on Earth is too fat.

Obesity is fast becoming one of the world's leading reasons why people die. In

an astonishing testament to globalization, this outbreak of girth is occurring

just as doctors everywhere are winning the fight against infectious diseases

from smallpox to malaria.

 

Now a new enemy is emerging in the 21st century — our appetite. Around the

globe, about 1.7 billion people should lose weight, according to the

International Obesity Task Force. Of those who are overweight, about 312 million

are obese — at least 30 pounds over their top recommended weight.

 

Weight's health effects

 

Type 2 Diabetes is the illness most directly linked to obesity. A condition that

often leads to heart disease and kidney failure, it is blamed for more than 3

million deaths a year.

 

Obesity can triple the risk of heart disease. One-third of all deaths globally —

about 17 million — are blamed on heart disease, stroke and related

cardiovascular problems, WHO figures show.

 

How it happened

 

Many factors contribute to the widening of the world's waistline. For starters,

there is cheap, plentiful food. Even in poor nations, the relative cost of

eating is declining. Another factor is how food is promoted and distributed.

There are demographic changes, too. In many nations, women in the work force

created a demand for convenience foods.
