Raw Gourmet Class WHEN: JUNE 13-19, 2004 WHAT: Raw Food Basics for the Home With a Teaching Component. CERTIFICATION COURSE This is the week that will teach you how to live the healthy lifestyle while actually living it. Pre-requisite: a large interest. Designed for all beginners, with a focus on food prep for the home, and also good for beginners who are interested in eventually teaching. Length of time: 7 days. Due to popular demand, this course is designed to be an excellent first step if you would like to teach. The original intention for this course was to be geared towards the homemaker, housewife, single man or woman who wants to live easily and joyously at 50% to 100% raw in their daily life. But a great many people have stated that they want to learn more about raw food, and that someday they would be interested in teaching it. Because of this interest, this will be a certificate course in beginning raw food prep and for those who are interested in eventually teaching raw food prep classes, a certificate in Preliminary Teaching Skills for Raw Food Prep. I will be assisted during this week by the very talented and able Lynda Carter of Petersburg VA, who is an excellent raw food chef and teacher in her own right. This course will cover (but is not limited to): fasting, juicing, sprouting, exercise, attitude, foraging, detoxifying, dehydrating, internal cleansing, equipment. Pre-Requisites When you attend Hippocrates Health Institute, Optimum Health Institute or one of the other raw food retreat centers, you have three weeks to be exposed to a lot of information. Since we will be taking only 5-7 days-In order for the group to benefit the most there are some pre-requisites. Do not expect to arrive knowing absolutely nothing. Pre-Requisites: a thorough reading of and familiarity with my book, The Raw Gourmet. Familiarity with several other raw food related books of your choice, perhaps some of Ann Wigmore's work, Brian Clement, Bernard Jensen, or some of the contemporary writers of today. Some experience or attempts at raw food prep for yourself or your family-the more experience you have the better for a good learning experience while here. A willing attitude. This is a class and it will revolve around food preparation with discussion of other aspects of this lifestyle from therapeutic to gourmet. This is not designed as a cleansing or detoxifying retreat. If you are ill this is not the place to come. The sky is the limit here in terms of what it is you can learn. The clearer you are about where you have been and where you want to go, the better the experience will be for you. If you know that somehow you want to make a living in this general area but have just a little bit of experience, then this is the group for you. All descriptions are subject to modification and change depending on the needs and wishes of the group, stated both before and during the retreats. In other words, individual needs will strongly influence forming compatible groups and will affect what is covered during the retreats. It is the goal of The Raw Gourmet to meet as many of each individual person's needs as possible in a group setting. This workshop will include guest teachers. Nomi's Background: Author of the best selling raw food recipe, information and resource book The Raw Gourmet (© Alive Books, 1999), Nomi Shannon lives in Sedona, AZ. Nomi is planning 5-7 day raw food intensive workshops to be held in her home, and has begun her next raw food book, Simply Raw. A raw fooder since 1987, Nomi was the Health Educator Program coordinator at the famed Hippocrates Health Institute in West Palm Beach Florida, where she worked for approximately five years. In 1999, her best-selling book, The Raw Gourmet, was published by Alive Books. Now working on her 2nd and 3rd books, Nomi is a well-known raw food chef, teacher and consultant. As the Health Educator Coordinator and Program Counselor at Hippocrates Health Institute in West Palm Beach Florida, Nomi scheduled 9 consecutive weeks of classes and was responsible for all aspects of the program. The Rest of the details: I can accomodate about 4-6 people in my home, more if you can bring a sleeping bag and a good attitude. (There are several sofas inside and chaise lounges outside if you want to sleep under the stars upon which you can place your sleeping bag; using the floor won't be necessary.) You will be considered a guest in my home. There is no charge for your overnight stays in my home. The fee is entirely for the classes you will be attending. The initial 4-6 people that sign up for a Raw Gourmet class will be offered a place to stay in my home; all others will need to make arrangements nearby at their own expense. I will help you obtain suitable housing in the area. For those who prefer more privacy or solitude there is a lovely bed and breakfast a short walk from my home that I can put you in touch with. The fees for the classes will remain the same. Those who desire certification will be required to attend all classes. What a Raw Gourmet Retreat held in my home is not: my home is not a clinic. This is not a week for cleansing and detoxifying. Enemas and colemics are not acceptable while you are here. So that you will not experience detoxifying symptoms while taking the Raw Gourmet class, if you are not used to eating raw food, it will be up to you to prepare for several weeks prior to arriving by eating 75-100% raw food. I will help you with this by telephone. During your week here, if you undergo detoxifying symptoms and choose to leave the class before the week is up, no money will be refunded under any circumstances. Certification can only be rewarded to those who attend all the classes. There will be time for walks, massage and other kinds of relaxation built in to the schedule. (This paragraph does not apply to the advanced teachers course. If you are not already eating 100% or at least 75% raw food, then you are not ready to take the advanced course.) Fee Structure: $1200 for the class if booked by May 15. $1400 for class if booked after May 15. No exceptions can be made in fee structure. If you stay at my home, there is no charge for that, it is free; you will be my guest. If you stay elsewhere, either a local home or a local Inn, there will be a commensurate fee. (You need to let me know at the time of reservation if you plan to stay at my home. There will be people who will not be able to attend if they can't stay here for free, so once the commitment is made I would appreciate no changes.) A 50% deposit is due upon booking and 50% the day of arrival. A $120 fee will be incurred for all cancellations prior to 14 days before class begins (May 31). Deposits become non-refundable 15 days prior to first day of scheduled class (May 31). Visa and Mastercard or personal checks are accepted. While late reservations may be possible if there is room, if enough people don't book initially the class may never be held. I retain the right to cancel a class if minimum reservations are not made, with full refund to you. So, don't hold back on making a reservation for June 13-19, 2004. This could result in not getting what you want! Early reservations are encouraged to ensure that the class will take place as scheduled. Conversely, I need to limit the number of people in each class, so first come, first served. I am going to ask that your initial query to me about the above class be in writing.
