I think you handled a difficult situation well. I don't know about others on this list, but I think you're lucky to have a husband who is also vegetarian and so supportive! I have not yet been in the same situation you were in, but if I was, I would probably have done the same thing. Fights with family around the holidays are too common, but no good for your ability to sleep at night. (For the record, the silent treatment from a relative after a family fight in MY family can last for months or even years.) My advice (which I probably couldn't follow myself) is to call your mom and try and smooth things out the best you can. Renew your offer to hold vegetarian festivities at your house, even if it's just this one year. Tell her your vegetarian lifestyle is JUST THAT IMPORTANT to you and your family, especially if the meal is in your home. Maybe you can convince her--convince them all--to just GIVE IT A TRY. Just this ONCE. Tell her that you really would love to host the dinner, really, really. Tell her that you've got plenty of yummy vegetarian food that will fill everyone up, and if everyone is still starving, you'll have it at someone else's house next year. If that still won't do it...perhaps you could offer a concession of some kind to further bait the hook? Like, I don't know (I'm just thinking out loud here), tell her if, after the vegetarian meal, anybody is unsatisfied, they can order in Chinese food or pizza (of course they won't need to do that, but it still runs the risk of bringing meat into your house, albeit in smaller pieces.) Or, say (half-kidding) that you'll even accompany everyone to the nearest McDonalds if they are still hungry after they eat (my strategy here is that McDonalds might be closed if you're doing this on Xmas). If she (even reluctantly) agrees, you allow her to get what she wants (not to have to cook this year), and to save face. And you might get the opportunity to enlighten your whole extended family on your lifestyle. An aside--I just have one question as a single mom--how on earth did you meet a compatible vegetarian man in Kansas!? Hope this helps! Only you know what will work in your situation.
