Guest guest Posted August 6, 2003 Report Share Posted August 6, 2003 > <laurieobrien > hummus > > Can anyone reccomend either a good brand of hummus to > try or a good recipe for hummus. <snip> Laurie, Here's a pretty classic recipe, and the " spiciness " is up to you, so add the garlic, salt and black pepper in small amounts at first. ~Doh HUMMUS from Vegetarian Express, Nava Atlas and Lillian Kayte 1-pound can of chickpeas, drained and rinsed 1/4 C tahini (sesame paste) 1/4 C water, or as needed [actually, I use olive oil instead, generously] 1 clove garlic, crushed or minced, or 1/2 t garlic powder Juice of one lemon 1//2 t ground cumin Salt and freshly ground pepper, to taste Paprika for garnish [optional] 1. Combine all ingredients except the last two in a food processor or blender. Process until smooth, adding small amounts of water [olive oil] if necessary. The consistency should be that of a thick dip. 2. While the mixture is still in the processor, season to taste with salt and pepper, and blend well.
