Guest guest Posted July 7, 2003 Report Share Posted July 7, 2003 Recently there was a discussion about how to incorporate flax seeds into one's diet. I started doing a bit of looking on the internet and found that cooking flax seeds does not do harm to them or cause any problems for us (as I had been told quite some time ago). In fact I found quite a few companies that sell flax seed bread but the prices are quite high. I found a great recipe that my kids and I really love and thought I'd share it with you folks. This recipe is for a 2-lb loaf. FLAX BREAD FOR BREAD MACHINES 9 - 11 ounces water (I use 11) 1 1/2 tsp salt 1 1/2 tbsp vegetable oil (canola or peanut preferably)* 2 tbsp molasses (I also use barley malt syrup or brown rice syrup) 2 1/4 C whole wheat flour 1 tsp vital wheat gluten (I use 1 tbsp) 1/2 C organic flax seeds (I grind them in a grinder) 2 1/2 tsp active dry yeast (I have used rapid rise as well as regular with rapid rise giving the best texture) All ingredients should be at room temperature (70 - 80 degrees F or around 21 degrees C. If they aren't, I use a bit warmer water in order to make sure this recipe works well). Use less water in the given range for high altitudes and higher humidity and weather conditions (I use more even though I am in Florida because I grind the flax seed. I normally have to add a few sprinkles more of water when the machine is kneading the dough also). Add ingredients to bread pan in the exact order given. Put your bread machine on a " whole wheat " setting. When finished cooking, place on a wire rack to cool. *NOTE: Using peanut oil will help keep your bread fresher longer.
