There was another question I kept forgetting to answer.... anyone have an unanswered question out there?! Anyway, any time you cook foods to the point of turning dark brown/black, it becomes carginogenic. Dark toast, foods grilled over an open fire, anything burned. That's about the limit of my knowledge on it, having read about it ages ago. I'm sure you can look around on the 'net and find out what happens chemically and why you shouldn't eat grilled/burned foods. Of course, in small amounts within an otherwise healthy (veg*n) diet, it's generally considered harmless.
