So many veggies you don't need to make an extra for a side dish. Psychedelic Chard and Rice 2 or 3 rainbow chard leaves (any chard will work) 1 cup basmati or jasmine rice 2 green onions chopped, (some of the top also) 2 cups vegetable broth 1/2 red bell pepper diced 1 small carrot, grated 1 celery stalk, chopped Wash chard and chop (including most of the stems, place all in the rice cooker and turn on. This would work on top of the stove. Fluff and serve. *Note - When this was done I toasted some black sesame seeds and sprinkled over the top. Those things look like ants, don't they?
