Guest guest Posted January 24, 2006 Report Share Posted January 24, 2006 made this last night, and forgot how good it was Mike's " I can't spell it but I can make it " Ratatoullie thinly sliced eggplant thinly sliced zuchinni sliced onion diced red pepper 1 can diced tomatoes 1 can chic peas, drained 1 or 2 cloves garlic salt, pepper herbs and spices: basil, oregano, sage, thyme, etc... parmesan I always soak my eggplant slices in saltwater to take away the bitterness - about 15 minutes or until the water starts to turn black in a saucepan: fry onions and garlic, add the veggies, I don't have a big enough pan, so I fry the eggplant, then the other stuff, then throw the eggplant back in cover with tomatoes (including liquid) and throw in the chic peas you can change the amouts based on how much zucchini and eggplant you use salt, pepper, herbs, etc... and stir it all up. cook at a medum heat, stirring often until the liquid thickens and exaporates. servoe over rice and garnish with parmesan my trade lists http://www.geocities.com/realshows my launch radio station http://launch./lc/?rt=0 & rp1=0 & rp2=1281193352 Quote Link to comment Share on other sites More sharing options...
