made this last night, and forgot how good it was

Ratatoullie

 

thinly sliced eggplant

thinly sliced zuchinni

sliced onion

diced red pepper

1 can diced tomatoes

1 can chic peas, drained

1 or 2 cloves garlic

salt, pepper

herbs and spices: basil, oregano, sage, thyme, etc...

parmesan

 

I always soak my eggplant slices in saltwater to take

away the bitterness - about 15 minutes or until the

water starts to turn black

 

in a saucepan:

fry onions and garlic, add the veggies, I don't have a

big enough pan, so I fry the eggplant, then the other

stuff, then throw the eggplant back in

cover with tomatoes (including liquid) and throw in

the chic peas

you can change the amouts based on how much zucchini

and eggplant you use

salt, pepper, herbs, etc... and stir it all up. cook

at a medum heat, stirring often until the liquid

thickens and exaporates.

 

servoe over rice and garnish with parmesan
