I hadn't made it in a while and forgot how good it was... mike Mike's " I can't spell it, but I can make it " Rattatatoullie thinly sliced zuchini and eggplant sliced onion diced red pepper 1 or 2 cloves garlic,chopped 1 can diced tomatoes 1 can chick peas, drained salt pepper herbs, spices: basil, oregano, thyme, sage, chili peppers, etc... parmesan in a saucepan: fry onion, garlic and veggies, my pan is small, so i fry the eggplant first, then the rest and throw the eggplany back in. add can of tomatoes and chick peas - use less or more depending how much veggies there are add salt, pepper, and herbs cook over med heat, occasionally stirring until liquid starts to absorb and thicken serve over rice, top with parmesan you can also take the leftovers, toast a bun with cheese and make a sanwich mike Quote Link to comment Share on other sites More sharing options...
