Portia Armenian Rice 6 tablespoons butter or margarine 3/4 cup vermicelli pasta broken to 1-inch pieces 1 cup long grain rice 1 cup water 1 cup vegetable broth 1/2 tsp. salt 1/4 tsp. pepper (optional - toss a pinch of dried favorite herbs in) Melt butter or margarine in medium size skillet and add vermicelli. brown lightly. Add rice, water, broth, and seasonings. Stir well. bring to a boil, cover tightly, simmer over low heat until moisture evaporates, takes about 15 to 20 minutes. Ready to serve.
