Guest guest Posted January 23, 2006 Report Share Posted January 23, 2006 Spinach Patties (made over the weekend and enjoyed immensely) 1 (16 oz) bag frozen chopped spinach, thawed 1 1/2 cups cooked white rice or brown rice 2 tablespoons flour 3 egg whites, beaten 2 tablespoons grated Parmesan cheese 1/4 cup chopped onion squeeze of 1/2 lemon dash of salt, pepper, red pepper flakes , garlic powder Squeeze water from spinach and place in bowl. Add balance of ingredients and mix well. Spray a skillet with cooking oil. Make patties and spray patties on both sides. Fry in medium hot skillet until browned on both sides.
