Guest guest Posted January 23, 2006 Report Share Posted January 23, 2006 Hi all......I'm new here.......live in the northern Calif. mts........off-grid, semi-homesteading lifestyle.........so here's a quick one.......was tired one evening and wanted a quicky meal.......so I doctored up a jar of organic pasta sauce like this: jar of Tomato Basil sauce olive oil 1/2 onion diced some mushrooms sliced 2 zucchini, sliced 3 garlic cloves, minced about 1/3 cup dried TVP some red wine a frozen pesto patty I made from last summer's basil crop saute onions, garlic, mushrooms, zucchini in olive oil........add red wine and let it cook down some.......add TVP and sauce........serve over pasta of choice........top with fresh grated parmesan cheese....... ........I just made this Curried Lentil Stew yesterday also.... olice oil 1 onion, diced 3 cloves garlic, minced 4 carrots, chopped 3 celery stalks, chopped 2 small potatoes, diced tomato sauce or fresh tomatoes on jalapeno or serano pepper 1 cup lentils 1 1/2 TB curry powder salt and pepper to taste saute onions and garlic in olive oil.......add rest of veggies and saute for another minute or so.......add tomatoes or sauce, lentils, seasoning, and 6-7 cups water.......bring to boil, then simmer until veggies and lentils are soft, about an hour.............I left this on our wood heating stove while we went out for a while and it was completely done when we came home, as the fire died down and the stew did not need stirring as it got thicker cuz of the lowering temps of the stove........ ..........so great to meet you all..............and now I'm off for 3 days to see my little 10 month old grand-daughter.............Vicky Photos Got holiday prints?
