Guest guest Posted January 22, 2006 Report Share Posted January 22, 2006 Zen Couscous Salad 1 cup dry couscous 1 1/4 cups water 1 tablespoon extra-virgin olive oil 1 red onion, diced 1 red pepper, diced 1 handful capers 1 tablespoon fresh lime juice 1 bunch chopped chives sea salt Place dry couscous in a small glass or ceramic bowl. In a pot, bring water to a boil and add a pinch of salt. Pour the boiling water over the couscous, cover with foil and let sit for five minutes. Meanwhile, heat up the olive oil in a skillet and saute' the onions. Add the red pepper and sea salt to taste, and saute' for a few minutes. The vegetables should be cooked, but still crunchy. Remove the foil from the couscous, fluff up with a fork and mix in the vegetables, using a larger bowl.
