Guest guest Posted January 22, 2006 Report Share Posted January 22, 2006 There are a couple of easy ways to make tofu cutlets. Either buy the firm tofu and slice it to about 1 inch thick slices. You can shape these into ovals if you like, and save the trimmings for salad or soup. OR you can buy the soft tofu and press it in a plastic hamburger press. Either way, you can bread them in corn flake crumbs, or a mixture of cornflake crumbs, flour, pepper, garlic and onion. I throw in a little cayenne, too. I try to avoid commercially prepared products such as Shake and Bake because of my own prejudices against chemicals and added sodium, but these sorts of coating mixes would work fine, too. I would think if you pressed your tofu, then sliced it about 1/4 " think you could bread it like a chicken cutlet. You could use shake and bake or make your own breading.
