We are planning on making this again and often. I think next time we will add some soy nuts to it. Maybe some dried blueberries we just didn't have any this time. Everyone teases me when I make zucchini bread since I don't peel the zucchini first and it's full of green specks. Try some over the top of soy or regular ice cream. It's so delish!
