Zucchini Flax Burgers 1 cup shredded zucchini (one med-large) 1/2

cup grated cheese ( I used rice mozzarella) 1/2 cup bread crumbs (seasoned

or regular) 1/3 cup ground flax-seed 1/3 minced onion 1 large egg

plus 1 egg white beaten 1/2 tsp. salt Small amount of olive oil to

brown in skillet. Combine all ingredients in bowl except olive oil. Form

into three or four patties and place into medium hot skillet that has been

prepared with a little oil for browning. Cook for about 4 mins. on each side

until browned.
