zucchini recipes or ideas request

Hi gang, do any of you have some recipes or ideas of what I can do with a huge

bag of

zucchinis from a friends garden? I've only steamed them before.

Stir fry with garlic and olive oil. Extras of choice.

 

Bake them on a flatbread pizza with pesto and tomatoes and garlic.

 

Roast them and serve them with portabello mushrooms on a sandwich.

 

Possibilities are endless. I cook with them all of the time. :)

I have cut them lengthwise, marinated in italian salad dressing and grilled, put

on bread with some hummus,mustard,lettuce,tomato and onion...makes a good

sandwich.

i love zucchini. here's what i like to do with

them.... cook up a pot of your favorite pasta.

meanwhile, saute some minced garlic in some olive oil

over medium heat. add quartered and sliced zucchini

and cook until just tender. season with salt and

pepper and dried basil or italian seasoning. toss

with your cooked pasta, sprinkle with parmesan and

serve. you can also add diced tomatoes to this.

i'll post my favorite zucchini bread recipe too.

Hi Chelsea. I love to grill smaller zucchini. I just wash them really well,

dry them off and slice them long ways down the middle. Sometimes I rub them

with some olive oil and throw them on the grill. I like them a little charred.

Then when they are cooked through, I drizzle a little more olive oil, salt and

pepper to taste and done. I think they are yummy like that. Once in a while I

will drizzle a little balsamic vinegar over them too.

Check our recipe files, there are all kinds of possibilities. One good

recipe (in our files) is for zucchini cakes (mock crab cakes). They

are very good and very easy to make. In fact you could make a bunch

and freeze some for later use.
