Guest guest Posted January 20, 2006 Report Share Posted January 20, 2006 Stir fry with garlic and olive oil. Extras of choice. Bake them on a flatbread pizza with pesto and tomatoes and garlic. Roast them and serve them with portabello mushrooms on a sandwich. Possibilities are endless. I cook with them all of the time. I've only steamed them before. > Thanking you all in advance, Chelsea I have cut them lengthwise, marinated in italian salad dressing and grilled, put on bread with some hummus,mustard,lettuce,tomato and onion...makes a good sandwich. I just wash them really well, dry them off and slice them long ways down the middle. Sometimes I rub them with some olive oil and throw them on the grill. I like them a little charred. Then when they are cooked through, I drizzle a little more olive oil, salt and pepper to taste and done. I think they are yummy like that. Once in a while I will drizzle a little balsamic vinegar over them too. One good recipe (in our files) is for zucchini cakes (mock crab cakes). They are very good and very easy to make. In fact you could make a bunch and freeze some for later use.
