I'll save you a big hunk, Paul! :-) Or, you can try it yourself: ORANGE AND POPPY SEED POUND CAKE 2 c whole wheat pastry flour 1 tsp baking powder 1/2 tsp salt 1 3/4 c sugar 1 1/4 c (2 1/2 sticks) unsalted butter, room temperature 5 eggs 1/3 c orange juice (I use half juice, half thawed frozen concentrate 1 1/2 tbsp grated orange peel (grind peels in a food processor or use a zester, or sometimes you can even frozen zest) 1 tsp vanilla extract 1/4 c poppy seeds Preheat oven to 350°F. Butter and flour 2 9 " x5 " loaf pans. Sift flour, baking powder and salt into medium bowl (I just dump it all in and use a whisk on it instead of sifting). Cream sugar and butter in a large bowl until light and fluffy. Add eggs 1 at a time, beating well after each addition. Beat in orange juice, grated orange peel and vanilla extract (batter may look curdled). Beat in flour mixture and then fold in the poppy seeds. Divide batter between the two pans. Place pans in oven. Bake until tops of cakes are brown and tester inserted into center comes out clean, about 55 minutes. Cool 10 minutes on wire rack.
