I did try my teacakes recipe with the Willow Run and they were not their usual wonderful self. :>( I decided not to risk my boiled custard recipe without the eggs, as I don't think it would taste right either. I hemmed and hawed around about it, but I just decided, nope, no point in even trying. I do use the Willow Run and the Earth Balance for mashed taters and baked ones, as well as toast. But I found I can't use either of 'em in biscuits--would you believe, they're too salty and that salty taste comes right through?! So I guess it's trial and error and just do what you can, and otherwise...well, some things just WON'T be the same without (organic) butter and (organic) eggs.
