I made the golden beets tops and posted the recipe immediately so I wouldn't forget what I cookd up. I have some left for lunch today. I agree, they are better than spinach. The golden beet greens made the broth a golden color, looks like I added saffron or turmeric in it, I didn't. You must try the radish and lentil recipe I posted, that is delicious also.
