I haven't had luck with any of the cheese I tried to make from the Uncheese Cookbooks. I did make a decent millet cheese but I have to find the recipe for the group, I have no idea where I put it, sometimes I get a little bit unorganized with recipes. For pepper jack, just stir in some dried crushed chilies and canned diced jalapenos (to taste) right before pouring into the loaf pan. I wouldn't suggest blendering it but I suppose you could. I really love the Ultimate Uncheese cookbook but I know I'm pretty much alone in that.
