Guest guest Posted January 16, 2006 Report Share Posted January 16, 2006 Greetings! I keep referring to Emma as my nanny, because she is. I feel bad doing so because she is much more than that. She is a new found friend and a Godsend to my family, without whom I would have surely lost my mind by now. She is also a wonderful cook. Here is a recipe that Emma gave me, and oversaw me through while I made it :smiles: 3 fresh sweet potatoes cream cheese ( 16 oz and put one quarter of that to the side) 1 1/3 cups brown sugar 1 stick of butter ( reluctantly I did not substitute for margarine, as Emma threatened my life) pinch of nutmeg 2 pinches cinnamon 2 eggs (again, the threats) evaporated milk (Emma says only use carnation, so that is what I used) 2 graham cracker crusts ( Emma said the premade kind was fine, so that is what I used) powdered sugar bake potatoes until tender, then cool until warm. Take one potato, sugar, cinnamon, nutmeg, and two eggs, and butter, and blend until smooth. Add cream cheese and potatoes, gradually blending until almost a whipped cream consistency. Add one half the can of evaporated milk, and continue to mix. Spoon into crusts. take two tablespoons of evaporated milk with the one quarter cup of cream cheese and two tablespoons powdered sugar, and add to bowl. Microwave for about 30 seconds. Stir until smooth. Place inside of a plastic storage bag with one corner cut off. make lines on pie and pull back and forth with toothpicks, or make a design. (this was the best part) bake at 350 for about 25-30 minutes. I guarantee that you will enjoy this pie, even if you don't enjoy sweet potatoes!
