I had to give this a special name since I was cooking this one day while listening to Donovan's Cosmic Wheels and the pasta is wheel shaped. " Cosmic Wheels Pasta Salad " 8 ounces of uncooked wagon wheel pasta (boil until done and drain) 1 can black beans, rinsed and drained 1 cup frozen corn thawed or canned corn 1 cup chunky salsa (mild, medium or hot) 1/3 cup Italian salad dressing of choice 2 garlic cloves, squeezed dash of cumin dash of hot red pepper flakes dash of salt if you desire 2 tomatoes, chopped 1/3 cup cilantro, chopped 8 ounces cheddar cheese (1/2 to mix in salad and 1/2 to garnish) 2 cups corn tortilla chips, coarsely broken (1 cup to mix in salad, 1 cup for garnish) 1 avocado, diced (garnish) *Optional-sliced olives for garnish *Optional-serve with lime wedges to squeeze over top or to put in your beer Mix all ingredients together except avocado, 1/2 of the cheese and 1/2 of the corn chips. After salad is well blended, garnish with balance of cheese and chips and place diced avocado over top. This is so good with a cold beer.
