Taco Casserole 10 taco shells, broken up 1 cup of TVP reconstituted 1 package of taco seasoning packet (one with no msg.) 1/2 cup cold water 1/2 onion minced 8 ounce can tomato sauce (1 can) 2 cups grated Jack cheese (soy cheese works) 1 large tomato cut into wedges 8 stuffed green olives Heat oven to 350F. and place 1/2 the broken taco shells in the bottom of a greased casserole dish. Place reconstituted TVP in a skillet , taco seasoning packet contents, water, and onion. Simmer for 8 minutes. Stir in tomato sauce and bring to a boil. Spoon mixture into casserole dish on top of the broken taco shells, sprinkle with half the cheese. Top with other half of broken taco shells and remaining cheese. Arrange tomato wedges and olives over cheese and bake for 20 minutes, until hot and bubbly. Cool 10 minutes and serve. Is very good reheated and works well for a potluck or a party.
