But not a recipe with all three things in the recipe together. I just always have alot of extra tomatoes and apples and don't know a whole lot how to make anything easy with apples. Paul - aside from chopping apples into hot cereal or pancakes or salads... here's an easy one, especially for winter. If you cut it in half, you could do 2 side by side in your loaf pan. You can change the filling as you like too - often I will use just raisins or cranberries that I have plumped/steeped in apple juice, mixed with nuts or not, and usually don't even use the sugar or syrup (I like my apples apple-y!). Very flexible recipe. Maple Walnut Baked Apples (Moosewood Desserts) serves 4 4 large cooking apples (like mutsu, greening, rome beauty) 1/2 c chopped toasted walnuts 2 tbsp packed brown sugar 1 tsp ground cinnamon 1/4 tsp ground nutmeg 1/4 c maple syrup 1/2 unsweetened apple juice Preheat the oven to 375*. Wash and core the apples, leavingthe bottom intact. Partially peel each apple (top half, or horizontal or vertical stripes). In a bowl, combine the walnuts, brown sugar, cinnamon, nutmeg, and 2 tbsp of the maple syrup. Stuff the hollowed out center of each apple with with nut mixture. Place the apples upright and close together in the pan. Combine the apple juice with teh remaining 2 tbsp of maple syrup and pour around the apples.
