Try also a few raisins - I make this kind of

thing with a few raisins, chopped apple, and

celery and a little onion - and let it sit with

the vegan mayonnaise etc. for a while (1/2 hr?)

in

the fridge to let the flavours mix, then add a

hint of commercial curry powder or garam masala

(it's the only thing I use these mixes for).

Makes a nice change :-)

Forgot to say - I also add a few chopped walnuts

just before serving (not earlier or they get a

bit soggy) - so you have the nice soft tofu bits,

the crisp celery, crisper and sweeter apple,

raisins and then the crunch of nuts - oh so very

very satisfying. The only problem with the recipe

is that you have to eat it all up <g> or by the

next day the onion has made everything too oniony

and all the other things have mixed together

rather toooooo well even if you leave the onion

out. Such a problem, eh?
